Lemon Cookies Recipe
When you think of cookies, two flavors usually come to your mind: sweet or salty. But what about sour? Can’t cookies be sour as well? Well, the answer is: yes! That is why I will teach you how to make some delicious sour lemon cookies. They are extremely easy to make with these lemon cookies recipe. These yummy lemon cookies can be eaten simple, or filled with various kinds of jams.
Lemon Cookies Recipe – Ingredients:
- 250 g butter
- 520 g flour
- 130 g powdered sugar
- 1 egg yolk
- Juice and rind from one lemon
- Any kind of sour jam
Lemon Cookies Recipe – Directions:
Whisk the sugar and butter until creamy.
Add the egg yolk, lemon rind, lemon juice and mix.
Start adding the flour bit by bit and mix with a spoon until you can. When it gets harder to mix, start kneading with your hands.
Knead until the dough stops sticking to your hands.
Using a rolling pin, spread the dough until about 3-4 mm thick. Take a small glass and start cutting round shapes from the dough. You can also use various cookie cutters for more interesting shapes, but I decided to stick to something simple.
Lightly oil a baking sheet and place the cookies on it.
Bake at a medium temperature for about 25-30 minutes.
When nicely browned, get the cookies out of the oven and leave them to cool down a bit. After they have cooled, take one cookie at a time and spread one teaspoon of jam on it. Do this with half of the cookies, leaving the other half as they are.
