Cranberry Chocolate Chip Cookies Recipe

Cranberry chocolate chip cookies are great for the holidays. It is nice to make cookies the family loves and have them around the house or give them as gifts. A delicious twist to an old chocolate chip cookie recipe is one where the cookies are made into easy-to-make bars and dried cranberries are added to give the recipe a little more zing. These cranberry chocolate chip cookies are very easy to make and everyone who tries them loves them.

Ingredients for making cranberry chocolate chip cookies:

  • 2 cups Vegetable Shortening
  • 1 1/2 cups white sugar
  • 1 1/2 cups packed brown sugar
  • 2 teaspoons vanilla
  • 4 large eggs
  • 4 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 (12 ounce) packages semi sweet chocolate chips
  • 1 cup dried cranberries

Mixing the dough

In a mixer bowl combine the shortening and the sugars and whip until the mixture is very creamy. Add the vanilla and the eggs and mix in well. Scrape the mixture down from the side of the bowl using a plastic or rubber spatula and make sure it is all mixed in. Set this mixture aside.

In another bowl combine the flour, baking soda and salt and mix it up carefully with a wire whisk so it is incorporated all together.

Add the dry mixture to the wet mixture in the mixer bowl, a little bit at a time. Keep the mixer on a slow speed so the flour mixture poof out all over the kitchen and the cook. I use a large tablespoon and add one at a time while running the mixer on lowest speed. I add the next tablespoon ones the previous one is completely mixed in. When the dough starts to thicken, you will have to turn up the speed to incorporate the mixtures well.

Once the dough is mixed well, remove the beaters from the mixer and scrape the dough from the beaters into the bowl. Add the chocolate chips and cranberries to the dough and fold them in using a plastic or rubber spatula.

Baking the cranberry chocolate chip cookies

Spray a 13”x 9”x 2” baking pan with non-stick spray and pour in the dough spreading it evenly throughout the pan. Press the dough into the pan with floured hands.

You can sprinkle a little bit of red or green colored sugar on top if you want to make these bars into Holiday cookies or just leave them plain. Put the pan into a preheated 350 degree Fahrenheit oven (325 if using a glass pan) and bake for 30 to 40 minutes. Some ovens might even take a little bit longer. The bars should be golden brown and the middle should be firm. You can stick a toothpick in the middle to check for degree of doneness, but it still might come out gooey because of the chocolate chips. If you press down lightly in the middle, it should not give too much.

Place the pan on a rack to cool and cut bars into squares. The cranberry chocolate chip cookies taste great warm or cold. They can also be frozen for about 1 month and taste fresh baked when thawed. Store fresh baked or thawed cranberry chocolate chip cookies in an air tight bag or container.
